Dulce de leche" in Spanish translates to sweet milk" and IS a staple in South American homes. The simple but delicate process of slowly reducing milk and sugar until it caramelizes creates a smoother-than-silk sauce. It's delicious spooned over French vanilla ice cream, crepes or pancakes.
